Feta and Walnut Salad


  • Romaine lettuce
  • Black beans
  • Feta
  • Chopped walnuts
  • Balsamic vinaigrette

This light and tasty salad is simple to prepare and goes with most dishes. Chop up crisp romaine lettuce into bite-sized pieces, then add feta, black beans and chopped walnuts. Mix with balsamic vinaigrette and serve.

Pasta With Pine Nuts and Spinach


  • Olive oil
  • Pine nuts
  • Onions
  • Spinach
  • Angel hair pasta
  • Salt and pepper to taste

Nothing is more satisfying than a simple pasta dish combined with garden fresh vegetables. While boiling angel hair pasta, sauté or toast pine nuts until lightly browned. Set the pine nuts aside, then dice and sauté white onions until their edges are brown.

Add several cups of destemmed baby spinach to the onions, then season with salt and pepper. Sauté the spinach until it’s just wilted, then add the pine nuts to the onions and spinach-mushroom mixture. When mixed, serve the vegetable mixture on top of the angel hair pasta. Add Parmesan cheese as desired.

  • Strawberries
  • Chocolate chips

This dessert recipe is simple and delicious! Start by washing and drying your strawberries. Lay parchment or wax paper onto a platter or cookie sheet. Next, heat up chocolate chips in the microwave until they’re melted, then stir the chocolate until it’s smooth and creamy. Dip the strawberries into the chocolate and lay them on the wax paper to dry. When all of the strawberries have been dipped in chocolate, put the platter or cookie sheet in the refrigerator and allow the chocolate to get hard. Serve after dinner.

Potted Green PlantSpring is here! Now is the perfect time to get out your scissors, paint and glue to create enjoyable craft projects for decorating your home. These projects can be kid-friendly, but younger children will need to be monitored and helped.

Umbrella Wreath

This beautiful doorway decoration can be hung on your front door or inside your apartment. Buy an inexpensive but colorful full-length umbrella and some artificial flowers. Wire the flowers together into an attractive bouquet, then turn the closed umbrella upside down and use the wire to attach the entire bouquet to the umbrella’s handle. When you’re finished, use wire to hang the umbrella upside down on your door in place of a wreath.

Colander Plant Hangers

This craft project turns a common kitchen tool into a hanging planter. Purchase a colorful enamel-coated pasta colander and fill it with dirt and potted plants. When you’re finished, use twine to hang the colander from a hook outdoors on your balcony. Water your flowers regularly, but don’t forget that the water will drain from the holes in the colander, so place the colander in an area where leaking water won’t do damage.

Painted Flower Pot

This craft allows you to personalize and decorate your common clay flower pots. Simply clean the outside of a clay pot, then use acrylic paint to create a pattern around the lip of the of the pot. Use your thumbs or a paintbrush to paint hearts, butterflies and other patterns on the pot itself. Be careful not to coat the entire pot in acrylic paint, as this can make it difficult for the clay to “breathe.” Instead, leave areas of bare clay on the pot so moisture inside the pot can evaporate through the porous fired clay.
