2 Fall Cookies to Try Baking This Season

Stack of CookiesAs you cozy up in our apartments in Atlanta this fall, baking delicious autumn treats may be a great way to spend a bit of leisure time. Try these two great recipes.

Pumpkin Spice Chocolate Chip Cookies

The combo of pumpkin spice and chocolate chips makes for amazing pumpkin spice chocolate chip cookies.

  • 2 & 1/4 cup of all-purpose flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of pumpkin pie spice
  • 1/2 teaspoon kosher salt
  • 2 sticks unsalted butter at room temperature
  • 3/4 cup of brown sugar
  • 1/2 cup of granulated sugar
  • 3/4 cup of pumpkin purée
  • 1 large egg
  • 2 teaspoons of vanilla extract
  • 2 cups semi-sweet chocolate chips

Preheat the oven to 375 degrees, then prepare two large baking sheets by lining with parchment paper.

Combine the flour, baking soda, pumpkin spice, and salt, and set aside. In another bowl, combine butter and all sugars, blending with a mixer.

Add the pumpkin purée, egg, and vanilla to the butter and sugar mixture, then blend the flour mixture. Refrigerate for half an hour.

Form one inch balls of cookie dough, then place around two inches apart on the cookie sheets. Bake for 12 minutes.

Pumpkin, Chocolate and Butterscotch Cookies

Combining pumpkin, chocolate, and butterscotch is one of the best ways to welcome fall into your Atlanta apartment home.

  • 2 cups all-purpose flour
  • 1 & 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 teaspoons ground cinnamon
  • 2 eggs

  • 1/2 cup vegetable oil
  • 1 cup canned pumpkin purée
  • 2 teaspoons of vanilla extract
  • 1 cup butterscotch flavor chips
  • 1 cup semi-sweet chocolate chips

Preheat the oven to 325 degrees. Combine the flour, baking powder, baking soda, salt, and cinnamon and set aside.

Mix eggs and sugar with an electric mixer for one minute. Blend in vegetable oil, pumpkin purée, and vanilla. Gradually add the flour mixture and then add the chips.

Form one inch balls of cookie dough and place two inches apart on baking sheets. Bake for 15 minutes.

Try These Easy Stretches From the Comfort of Your Apartment

Some stretches are best done with a chair or a fitness ball (available in any exercise equipment store), but many just require a floor. Hold poses for approximately 30 seconds to get the most benefit.


The Savasana pose involves lying on your back and rolling your head sideways a couple of times before centering it. Then, you tuck your chin in toward your chest, which lengthens your neck muscles.

Hamstring Stretch

While inhaling, tighten up your abdominal muscles. At the same time, your spine will lengthen. Then, exhale while bringing your chin closer to your chest, keeping your knees soft and not locked.

Neck, Back, Legs and Hips Stretch

Stretch out your neck, back, legs and hips by placing one of your heels on a chair positioned in front of you. Keeping your legs straight, inhale while moving your arms over your head. Then, exhale while reaching over your leg (see if you can hold onto the back of the chair while doing so for better flexibility). Inhale, resume standing and then repeat twice.
